Diet and Nutrition

Christopher Bryant has a PhD from the London School of Economics and Political Science (1970) and has been Professor at the Universities of Waterloo (1070-1990) and Montréal (1990 to 2014) and is currently Adjunct Professor, School of Environmental Design and Rural Development, University of Guelph (1912 onwards), and he is also Adjunct Professor, Geography Department, University of Montreal (2014 onwards). Christopher Bryant has published 121 articles in different journals, 175 book chapters, 32 books and monographs; 27 Reports to different governments and agencies; 64 other publications; and 25 book reviews; and he has made over 560 presentations during his career. His fields of research are: agriculture and food production in and around cities and metropolitan centers; food security; community development; land use planning; strategic development planning for communities, organizations and agriculture; sustainable development; resilience building for communities exposed to flooding and climate variability; adaptation of agriculture and tourism development to climate change and variability. He is placed in the top 5% of the over 15 million researchers on Research Gate.

Udaya M. Kabadi, M.D. FACP, FRCP(C), FACE is a graduate of Seth G.S. Medical College, the University of Bombay in Bombay, India. He completed his internal medicine residency at KEM Hospital Parel in Bombay and also a medicine residency at Jewish Memorial Hospital and Beth Israel Medical Center in New York, New York. He also completed a fellowship in Endocrinology and Metabolism at VA Medical Center and Beth Israel Medical Center in New York, New York. Dr. Kabadi is board certified in Internal Medicine, Endocrinology and metabolism and geriatric medicine by the American Board of Internal Medicine. He is a fellow of the Royal College of Physicians of Canada, the American College of Physicians and the American College of Endocrinology. He has been a Chief Editor, Associate Editor and member of Editorial Boards of several medical journals. Dr. Kabadi is currently an Adjunct Professor of Medicine at the University of Iowa College of Medicine, Iowa City as well as Des Moines University, Des Moines, Iowa. Dr. Kabadi has over 200 publications in peer-reviewed journals. He has presentations to his credit, at regional, national, and international arenas. He has been selected as ‘ Teacher of the Year’ many times by students, residents, and fellows in training. He has been involved in research in the area of Carbohydrate Metabolism and Diabetes, Thyroid Disorders and Osteoporosis as well as in clinical practice and education for several years.

Haleama Al Sabbah is an Associate Professor and Researcher in Public Health Nutrition. She completed her PhD in Public Health Nutrition (Medical Sciences) in 2008 from the Faculty of Medicine,/ Gent University, Belgium. She was awarded a doctoral scholarship from Belgian Technical Cooperation (BTC). Her Ph.D study was part of the National Study of Palestinian Health Behaviors in School-aged Children (HBSC-2004). From 2011 to 2012, Haleama was a Fulbright Senior Visiting Scholar and did Post-Doctoral studies in Public Health and Nutrition at Jean Mayer Human Nutrition Center,/ Tufts University, Boston, USA. From 2009 to 2013, she served as director of the Public Health Department,/ Faculty of Medicine,/ An-Najah University, Palestine. Dr Al Sabbah has published numerous articles in scientific journals and served as an editorial board member and reviewer for several peer-reviewed journals. She has participated in many conferences, courses and research studies all over the world, including Europe, USA, Canada, West Africa and some Arab countries. Haleama earned her first degree in Public Health Nutrition from the Faculty of Medicine/ Jordan University of Science and Technology (JUST) in 1990. She worked as a nutritionist in a number of hospitals in Amman, Jordan and then at Amman University. In 1995, she worked at the Red Crescent Society Maternity Hospital in Ramallah. In 1997, she was awarded a scholarship for postgraduate masters-level study in Public Health at the Community Health Institute, Birzeit University, Palestine. During her study at Birzeit University, she focused on Primary Health care. From 1998-2000, Haleama received another scholarship to study for a Master of Philosophy degree in International Community Health and Nutrition in the Faculty of Medicine at Oslo University, Norway. Her Master s thesis title was Diabetes Self Management in Rural Palestinian Community.

Holding graduate degrees in medical sciences, public health, primary health care, international community health and nutrition, I conducted extended research in public health, diabetes self-management, nutrition-related behaviors, overweight and obesity, body weight dissatisfaction, weight control behaviors, breastfeeding and complementary feeding. Moreover, I was the main supervisor for 5 master’s theses in Public Health and 3 graduate theses for medical students. My research interests have grown to include investigations in the field of Public Health and Nutrition with special focus on weight-related behaviours.

My name is Claudio Frasson I have been a doctor for over 20 years, I deal with nutrition since 9. I was a general surgeon in Italy and the USA, I have often been in the United States to deepen my skills. In 2010 I graduated from Master's Degree in Population Nutrition and Food Safety and became a nutritionist. During the master I have mainly studied the skills on human micronutrition; subsequently I was a speaker several times at the international NUTRIMI congress, I wrote in Italian magazines for national dissemination, but above all I forged myself with the title of contract professor from 2013 at the Master 2 level in Food quality and safety University of Padua. I am co-supervisor of numerous Master's theses. In 2013 I was invited to report on micronutrition at the Miller school of Miami Diabetes Institute.

Dr. Shuxin Han has been engaged in metabolic biology research for nearly 15 years. Dr. Han mainly studies the transcriptional regulation of metabolism by various transcription factors from previously nuclear receptors to currently kruppel-like factor (KLF) family. His recent academic achievements include three parts. First, Dr. Han opens a new research area of the KLF family regulation of endobiotic and xenobiotic metabolism. Second, Dr. Han discovers a novel patent therapeutic target for several human diseases such as liver injury and infertility. Third, Dr. Han expands and deepens the field of surgery metabolism.

Dr. Osama Ibrahim is a highly-experienced principal research scientist with particular expertise in the field of microbiology, cell biology, and bioprocessing for both bio pharmaceuticals, and food ingredients. He is knowledgeable in microbial screening ,culture improvement; molecular biology, genetic engineering, and, fermentation research (antibiotics, enzymes, therapeutic proteins, organic acids) and biochemistry for metabolic pathways, enzymes kinetics, enzymes immobilization, bioconversion, and analytical biochemistry. Dr. Ibrahim was Principal research scientist and external research liaison for Kraft Foods R&D with Universities for research projects related to molecular biology and bioprocessing. He holds three bioprocessing patents and several publications. After retirement from Kraft Foods he formed his own biotechnology company providing technical and marketing consultation for startup biotechnology in United States / Overseas and a key note speaker for international bio conferences. Dr. Ibrahim received his B.S. in Biochemistry with honor and two M.S. degrees in Industrial fermentation and in Microbial physiology. He received his Ph.D in Basic Medical Science (Microbiology, Immunology and Molecular biology) from New York Medical College. His research dissertation was on the construction of plasmid for the expression of a fusion protein of VEGF121/ Shiga-like toxin as a therapeutic protein for targeting angiogenesis (cancer treatment). Rahnfong Lee has completed his PhD in 1988 at the age of 27 years from University of Massachusetts at Amherst, USA. He is the Adjunct Professor of National Taipei University of Technology, Taiwan. He has worked over 20 years in the industry of glucose monitoring, and has filed over 50 patents worldwide. He is currently assisting companies in Algeria and Saudi Arabia to locally produce glucose monitoring systems with new technologies, such as 100% non-destructive online quality check on every test strips to identify bad strips and fix them with laser technology to become good strips. He is the first one to produce glucose test strips with gold plated printed circuit boards.
